Orange and strawberry pancakes.
Orange and strawberries are great as they contain a good amount of fiber and vitamin C.If you don’t have strawberries you can also use other berries such as blueberries or raspberries.
1/3 Cup orange juice
Rind of 1 orange
1/2 Cup of halved strawberries
1/3 Cup of low fat milk
1 egg
1 Cup of wholemeal self-raising flour

Heat frying pan over a medium heat and grease pan with olive oil spray.
Sift flour in a bowl and make a well in the middle.In a jug combine the egg,rind,orange juice and low fat milk and mix well.
Add it to the sifted flour and mix well to form a smooth batter.
Place a 1/4 Cup into pan and then place strawberries on top and cook until you see bubbles then flip the pancake over and cook until it is browned lightly.
Immediately serve with your favorite yogurt.
Chicken Risotto
Risottos can be very tasty and healthy .If you are vegetarian you can replace the chicken with any kind of vegetable that you choose.This recipe serves 4.
2 Cups of arborio rice
1 Large chicken breast with skin off and cut into small pieces.
6 Cups of chicken stock
1 large onion diced
1 Tablespoon of olive oil
200g of button mushrooms that are halved
200g of semi dried tomatoes
Heat oil in frying pan and then add the onion and cook for a minute
Then add the arborio rice and stir and cook for a further minute
Heat chicken stock in a saucepan and simmer.
Then add 1 cup of stock to the rice mixture,and keep adding the stock each time the liquid has absorbed.
After 10 minutes add the chicken to the rice.When all the liquid has been absorbed add the sun dried tomatoes and mushrooms.
Serve immediately.
Warm Chicken and mango salad.
Mangoes are very high in vitamins and minerals as well as anti oxidants.Chicken is a good source of protein and is low in fat.This salad is great as it is low in fat and has essential oils in the avocado which is very good for us.This recipe serves 1-4 people.
4 Small skinless chicken breasts
200g salad mix
1 large avocado sliced thinly
1 mango sliced
1 Cup of cherry tomatoes halved
1 cucumber sliced
1 spring onion sliced
Dressing
1/2 Cup of mango chutney
1 T hot water
2 T balsamic vinegar
Salt and pepper to taste
Grill chicken on a hot char grill or frying pan.Cook chicken on each side for 4-5 minutes.Put chicken in foil and wrap it up and set aside.
Add the salad mix,avocado,mango,cherry tomatoes,cucumber and spring onion.
Then slice the chicken and place it on the salad.
Then serve it with the dressing.Combine mango chutney,water and balsamic vinegar and salt and pepper.
