Fresh garden salads are a great low fat recipe to choose and can be accompanied with a protein of your choice such as chicken, turkey or fish. You can also use different types of spices of your choice to add flavor to your meal, in this particular recipe we will be using Cajun spices.
Preparation:
For the cooking time it should take you 25 minutes plus 15 minutes for you to prepare this meal.
Ingredients:
Up to 8 skinless chicken fillets depending on the size
Juice of one lime
5 Tablespoons of flour
Tablespoon of Cajun spices/seasoning
Teaspoon Cayenne Pepper
Quarter Teaspoon of salt (optional)
1 – 2 Oranges
Small red onion sliced
Tablespoon of olive oil
125g of baby spinach and rocket

Method:
1. Before you start preheat the oven to 220 celsius. You can then lightly coat the chicken in lime juice and combine flour, cayenne pepper,seasoning and salt into a bowl and mix well together.
2. Place the flour mixture onto a plate and then coat the chicken until it is evenly spread.
3. Then place the chicken on a wire rack and put in the oven for approximately 25 or golden brown.
4. While the chicken is in the oven, begin to peel the oranges, cut into little pieces and also save the juice which can be also used for the dressing.
5. Mix the orange pieces,orange juice,spinach and rocket salad,oil and onion together and place on serving plates equally. Next place the crispy chicken on top to serve and enjoy.
